Small-Batch  Blueberry Muffins  (makes 6)

These homemade blueberry muffins are full of flavor and texture.

You can make these with fresh or frozen blueberries!

Mix together melted butter, granulated sugar, eggs, vanilla, and lemon zest. Beat it all together until combined.

Whisk together flour, baking powder and salt. Add 1/2 to the wet mixture...

Alternating with buttermilk. Continue with the remaining buttermilk and flour.

Just gently fold it, taking care not to over mix. Divide the mixture into muffin cases and....

...press the blueberries into the mix. Adding them at the end stops them bleeding into the batter.

Bake at 425°F/220°C for 5 minutes then turn down the oven temperature to 375°F/190°C and bake bake til golden.

Serve the muffins while still slightly warm, dusted with powdered sugar.
