Blackberry Sweet Rolls

With tangy blackberry cream cheese frosting.

These fluffy sweet rolls are like blackberry cinnamon rolls but with a gooey blackberry filling.

They use a lightly enriched dough that's super fun to work with. It makes a really tender and soft bread.

Warm up milk, then add sugar and yeast. Add in the flour, salt, and egg.  Mix by hand or on low speed until a thick dough forms.

Add in the softened butter, a few cubes at a time. Mix or knead for around 10 minutes until the dough is soft and strong.

Let it rise in a greased bowl until it has doubled in size.

While the dough is rising, in a saucepan add blackberries, lemon, sugar, cornstarch and salt.

Cook until thick and glossy, then let it cool down to room temperature. Place in the fridge until needed.

Roll the dough into a rectangle.

Spread it with the blackberry mixture, but keep a little for the frosting.

Roll it up into a log, then cut into 12 rolls. Let the rolls rise in a 9x13inch pan until doubled. Then bake.

While the rolls are baking whisk cream cheese and butter until smooth. Add blackberry filling, powdered sugar, vanilla and salt and whisk til creamy.

Dollop it over the warm buns and use the back of a spoon to spread the frosting out.
