Flaky pastry, juicy blackberry filling and a crisp and sweet cinnamon crumble topping.

The filling can be made from frozen or fresh blackberries, mixed with lemon zest, juice, cornstarch and a little cinnamon.

Cooked until thick and glossy.

Cool it then tip into a single pie crust (homemade or storebought).

Top generously with cinnamon crumble.

Bake until deep golden brown bubbling.

Serve with a scoop of vanilla ice cream.
