Brioche Hot Cross Buns

These delicious, buttery buns are a step up from traditional hot cross buns, with a rich flavor and tender, soft texture.

Begin by soaking raisins in orange juice and orange zest.

Add yeast, milk, sugar, eggs, spices, salt and flour to a stand mixer.

Mix into a really stiff dough.

Mix in lots of softened butter, a bit at a time.

Mix for 15 minutes until the dough is strong and elastic.

Add in all the raisins and orange juice.

Mix until the juice is incorporated.

Form it into a ball and let it rise until doubled. Then punch it down and let it rise in the fridge again for best flavor, or go right to shaping.

Shape into 12 equal balls. Place in a 9x13inch pan and let rise.

Pipe on crosses, then bake until golden brown.

Brush the baked buns with sugar glaze.
