White Chocolate Coffee Cookies

These chewy cappuccino cookies have so much flavor with toasted brown butter, cinnamon, white chocolate chips and rich espresso.

Brown butter and let it cool down for around 8 minutes  in a large mixing bowl.

In a seperate bowl whisk together flour, instant espresso powder, cinnamon, salt, baking powder and baking soda.

When the butter has cooled, mix in brown sugar, white sugar, egg and vanilla.

Stir in the dry ingredients followed by the chocolate chips.

Scoop around 1 1/2 tablespoons of dough per cookie.

Space at least 2 inches apart on parchment paper lined baking sheets.

Bake for around 9-11 minutes , until they have puffed and the edges have cooked. The cookies will seem very soft.

They will firm up as they cool but will be chewy and delicious!
