Made with brown butter to give notes of caramel and butterscotch. 

Melt the butter in a medium saucepan, then let it cook further for around 3-4 minutes until the milk solids have caramelized. Pour it into a bowl and allow it to cool down for 10 minutes.

Add in granulated sugar, egg, and an extra egg yolk, and vanilla. Beat it together until well-combined.

Mix in flour, salt, baking powder and baking soda. Stir through chocolate chips.

Roll balls about 2 tablespoons worth and space far apart on lined-cookie trays. Give them room to spread.

Bake the cookies for around 9 minutes. After baking, sprinkle with a little flaky salt.
