This is a simple lemon curd recipe using fresh lemon and eggs. It's bright, thick, and full of lemon flavor.

Whisk egg yolks, whole egg, and sugar until well combined. Whisk in lemon juice and lemon zest.

Place the bowl in the microwave in 40-second increments. Stir each time, for around 3-4 minutes total until  thick.

This can also be done on the stove in a bowl balanced over a saucepan of simmering water.

Stir the butter into the hot lemon mixture and stir until smooth.

Pour the finished curd through a sieve into clean jars. It will thicken as it cools. Once cooled, store it in the fridge.
