Moist Banana Gingerbread

Melt the butter in a large bowl, then mash in ripe bananas.

Add in the sugar, eggs, vanilla and molasses.

Whisk until combined. In a separate  bowl, whisk together flour, spices, salt and baking soda.

Mix the dry ingredients into the banana mixture, then stir through hot water.

Mix until it's a pourable cake batter.

Pour into a lined 9x5inch loaf pan.

Top with an extra sliced banana and some optional coarse sugar.

Once baked let it cool for 20 minutes before slicing.
