Blueberry Galette With Homemade Puff Pastry

Rough puff pastry can be made in about 15 minutes, then it just needs 2 hours chill time.

The buttery pastry is folded over multiple time to create flaky layers

The finished pastry just needs 2 hours to get really cold (cold butter is what gives the layers!)

Combine blueberries (fresh or frozen) with sugar, a little lemon, cinnamon, vanilla and cornstarch.

Place it in the middle of a pastry circle and fold the dough over.

Brush with a little beaten egg mixed with a splash of water.

Bake in a hot oven until golden and crispy.

The pastry is so flaky and delicious! Serve with your favorite ice cream.
