Homemade Blueberry Bagels

This blueberry bagel recipe makes amazing homemade bagels. They're chewy bagels, lightly sweet, and a pretty purple.

You can use fresh or frozen blueberries. They get cooked down before being used to concentrate the flavor.

Bring the berries to a simmer, stirring regularly until the liquid in the pan has reduced by half and slightly thickened.

In a large bowl or the bowl of your stand mixer fitted with a dough hook, combine water, yeast, sugar,  vanilla, salt, bread flour and the blueberries.

Mix it on low speed or by hand until it makes a thick dough that is just slightly sticky.

Knead it for around 10 minutes until it is strong.

Place in a greased bowl and allow to double in size.

Punch down the risen dough and pull it onto a floured surface. Cut into 8 equal pieces. Shape each piece into a ball.

Use your thumb and index finger of both hands to push a hole into the center of each ball of dough, then roll the dough ball around your fingers in a circular motion to widen the hole.

Place the shaped bagels on a prepared sheet pan lined with parchment paper for around 30 minutes while the oven preheats and a pot of water is brought to a boil.

Poach the bagels in boiling water with honey or brown sugar, for 30 seconds on each side.

Bake in a hot oven for 20-25 minutes until golden brown. Let the bagels cool to room temperature before serving.
