Lemon Curd Crumble Cookies

These lemon curd crumble cookies use a buttery shortbread base, a tangy lemon curd filling, and a crumble topping.

You can use homemade or store-bought lemon curd if you're short on time.

Add flour, powdered sugar, salt, and cold butter to a food processor.

Blend the butter into the flour until it forms fine crumbs, then keep blending it until it begins to clump together around the sides of the bowl.

When you press it in your hands, it should form a dough.

Line a muffin pan with paper liners and add 1 tablespoon of dough into each liner. Press it down into the liner with the bottom of a wooden spoon.

Add on one teaspoon of lemon curd.

Top with more of the dough, crumbling it on top of the curd.

Bake for 20 minutes or until just going lightly golden brown around the edges.
