Lemon Poppy Seed Rolls

Pillowy soft lemon poppy seed rolls with a gooey lemon curd center.

The dough is nice and easy to work with and can be made by hand or in a stand mixer.

In a mixer add milk, yeast, sugar, flour, lemon zest, vanilla, poppy seeds, salt, and egg.

mix on low speed to form a thick dough. Add in softened butter, a few cubes at a time.

Mix for around 10 minutes until the dough is strong.

Once kneaded, form the dough into a dough ball. Transfer the dough to a lightly bowl and let it double in size.

Punch the dough down and pull the risen dough from the bowl onto a lightly floured work surface. Dust the top of the dough with some flour.

In a small bowl add granulated sugar and lemon zest and use your fingers to rub the zest into the sugar, releasing the lemon oils.

Roll the dough out into a large rectangle. Spread the surface of the dough with softened butter and sprinkle with the lemon sugar. Roll it up and cut into slices.

Spoon the lemon curd into a piping bag and squeeze about a tablespoon worth into the center of each shaped bun.

Frost with creamy lemon-cream cheese frosting.

Enjoy these sweet lemon rolls slightly warm.
