Lemon & White Chocolate Cookies

These chewy lemon cookies are easy to make and delicious! They have a great lemon flavor, chewy edges, and soft centers.

Begin by rubbing lemon zest into granulated sugar. This releases the lemon oils.

Add in softened butter and beat for 2-3 mintes until light and creamy.

Add in an egg and vanilla and mix until combined.

Stir in flour, baking soda and salt.

Add in chocolate chips and stir until everything is combined.

Shape into cookie dough balls and bake until lightly brown around the edges but the middles are still soft.

Let the cookies cool on the tray before moving to a wire rack.
