Make the best and easiest lemon curd in the microwave. It's thick, sweet and tangy.

In a microwave-safe bowl, whisk together egg yolks, whole egg, a pinch of salt and sugar. Add in fresh lemon juice and grated lemon zest.

Cook in 40 second increments, stirring after each time, until thick enough to coat the back of a metal spoon.

Stir cold butter cubes through the hot lemon mixture and stir until smooth.

Pour the curd through a sieve into a clean jar. It will thicken more as it cools. Once cooled, store it in the fridge.
