Not Too Sweet Buttercream Frosting

Ermine frosting is a less sweet buttercream that's light and fluffy. It's great for frosting cakes and cupcakes.

It's made with a flour, milk and sugar paste that's whipped into butter.

Whisk flour, sugar and milk together in a saucepan. Place over medium heat.

Cook until it becomes a thick custard texture and add vanilla extract.

Pour into a bowl and let it cool down completely to room temperature.

Whisk softened butter until creamy and light.

Whisk in the cooled paste, a little at a time until incorporated.

Keep whipping until thick and fluffy.

Smooth out any large air bubbles with the paddle attachment or a rubber spatula.
