Chewy  Oatmeal Cookie Bars

These oatmeal chocolate chip cookie bars are deliciously chewy!

They've got the perfect amount of chew, combined with a golden exterior, filled with oats and lots of chocolate chips.

Beat together butter, brown sugar and white sugar until creamy. Beat in an egg and vanilla.

Add in all-purpose flour, rolled oats, baking soda and salt.

Stir until combined into a shaggy dough, but there are still flour streaks remaining.

Chop up a bar of milk chocolate or dark chocolate into chunks. Alternatively, use chocolate chips.

Add this to the cookie dough mixture and stir it in.

Press into a lined 8x8 baking pan and spread it out evenly.

Bake for around 20 minutes. Let it cool in the pan for around 45 minutes before removing.

Slice into 16 slices.

They are so chewy and yum! Store at room temp for up to a week in an airtight container.
