Overnight Bagels

Thick with the right amount of toothsome chew, this overnight bagel recipe makes the best homemade bagels.

Mix water, yeast, malt syrup or brown sugar and stir it together. Add in flour and salt. Knead together into a thick dough.

Knead for at least 10 minutes until smooth, then transfer to a bowl.

You have the choice to give the dough an overnight rise in the fridge and shape and bake them the following day or make and bake them on the same day.

Once risen, cut the dough into eight equal pieces. Shape each piece into a ball.

Using your thumbs and index fingers, push a hole into the middle of the dough ball, then roll the dough ball around your fingers in a circular motion to widen the hole.

Let the bagels rise for 20-30 minutes til puffy.

Poach the bagels for a minute in boiling water mixed with honey or malt syrup.

Sprinkle with seeds, then bake in a hot oven until deep golden brown.
