Small-Batch Vanilla Cupcakes (makes 6)

This small-batch recipe makes 6 vanilla cupcakes. They are moist and fluffy and full of vanilla flavor.

This recipe is perfect if you want a homemade cupcake but don't want to make a dozen of them.

Begin by beating together room temperature butter and sugar until light and creamy - for around 5 minutes.

Add in a large egg and some vanilla paste or extract and beat them in well.

Mix together flour, salt and baking powder and add to the mixture, alternating with buttermilk.

Mix until well combined but don't over-beat it.

Line a muffin pan with 6 liners and divide the mixture evenly.

Bake for 20 minutes, then let them cool. Once cold, frost with cream cheese frosting.

The frosting is made of cream cheese, butter, powdered sugar and vanilla.
