Banana Pecan Muffins

They're moist and fluffy, with a bit crunch from toasted pecans.

Toast pecans in a pan, then let them cool.

Mash the bananas in a large mixing bowl. Add the melted butter, large egg, brown sugar, yogurt and vanilla extract to the mashed bananas and mix well until combined.

Whisk together the flour, baking powder, baking soda, and salt in a small bowl. Set aside.

Add in the dry ingredients. Use a rubber spatula to fold the muffin batter together until nearly combined.

Scoop into a lined muffin pan. Add a piece of sliced banana and a pecan half on top of each muffin. Sprinkle with turbinado sugar.

Bake until golden brown. Let the muffins cool in the pan for 5 minutes, then remove them and place them on a wire rack to cool further to room temperature.
