They’re fluffy, filled with cinnamon sugar, and iced with a vanilla cream cheese glaze.

It's easiest to make thye brioche in a bench mixer but totally doable by hand! You just need elbow grease to turn it from this, into....

...this. Shiny, glossy and strong brioche dough. An optional overnight rise in the fridge brings the best flavor.

Then it's time to roll, spread with butter and cinnamon sugar and coil it up into a log.

Dental floss will let you cut nice and even slices. Let them rise in a baking tray or cast iron pan. Then bake!

While still warm, slather with cream cheese icing.  So good!
