Lemon Sour Cream Cake

A super simple lemon sour cream cake that's light and fluffy, with bright lemon flavor. Top it with powdered sugar or a lemon glaze.

In a small bowl, whisk the dry ingredients and set aside. Add lemon zest to sugar in a large bowl.

Use your fingers or a fork to rub the zest into the sugar to release the lemon oils. Do this for around two minutes.

Add the lemon juice, eggs, oil, sour cream and vanilla, and beat well to combine.

Add in the dry ingredients.

Whisk them through until combined, but don't over-mix the batter.

Pour batter into an 8-inch lined cake pan and spread it out. Bake for around 45 minutes.

Once cooled, dust with powdered sugar or make a simple lemon glaze.
