Strawberry Apple Pie

This delicious strawberry apple pie recipe combines sweet strawberries and juicy apples. The combination of fruit brings a fun twist on a traditional apple pie.

This pie uses a homemade pie crust. However, if you're short on time, feel free to use a store-bought pie crust.

Peel and core the apples and slice into ¼ inch slices. Add to a large bowl. Squeeze over lemon juice and sprinkle over two tablespoons of sugar. Toss to coat. Hull the strawberries and slice them into ¼-inch slices. Add to a medium bowl and toss them in 2 tablespoons of sugar.

Let the fruit macerate for around 2 hours, then drain them from the extra juices that are released.

Add the strawberries and apple slices to a bowl and toss together with cinnamon, flour, salt, lemon zest, and vanilla.

Pour the collected fruit juices into a small saucepan placed over medium heat and bring to a simmer. Simmer this until it has reduced by around ½ and has slightly thickened.

Add the fruit to a pie shell and pour over the fruit syrup.

Top with a second pie crust and brush with egg wash. Sprinkle with a little coarse sugar.

Bake until deeply browned and the apples are soft. Let the pie cool down for around 4 hours to avoid it leaking.
