Blueberry Pie (with fresh or frozen blueberries

This is an easy and delicious homemade blueberry pie with frozen blueberries. The filling is thick and flavorful, encased in a buttery and flaky pie crust.

Begin by making the pie crust so it can chill for two hours.

If you're short on time you could also use a double 9-inch store-bought crust.

Then make the filling by combining blueberries, lemon, sugar and cornstarch.

Cook it until it's thick and glossy, then let it cool to room temperature.

Roll out one pie crust, then add in the cooled filling,

Top it with the second pie crust. You can do a full crust or a lattice top.

Brush with egg wash, then bake until deeply browned and bubbling.

Let it cool before serving. It's delicious with vanilla ice cream!
