These chewy chocolate chip marshmallow cookies are so fun and delicious! 

they have an easy chocolate chip cookie  base, stuffed and topped with gooey melted marshmallows.

Melt the butter and let it cool. Add the granulated and brown sugar, the egg, and the vanilla and stir together.

Add in flour, cornstarch, half a teaspoon of baking soda and baking powder, and salt. 

Stir it into a thick but sticky dough. 

Chop semi sweet chocolate into chunks and add this to the cookie dough. 

Chill the dough for at least 2 hours but up to 2 days.

Take 1 1/2 tablespoons dough and add 3-4 mini marshmallows into the middle

Roll it into a cookie dough ball and place on parchment lined cookie sheets.

Bake for 7 minutes then add on 3-4 more marshmallows. Bake for 2 minutes more

A cook's blow torch gives the marshmallows that extra toasted look, but an oven will do the job too. 

They're super chewy, stretchy and delicious.
