Triple Ginger Cookies

These chewy triple ginger cookies are spicy and delicious with great texture and flavor.

They contain three kinds of ginger: Ground ginger, fresh root ginger and candied ginger which also known as crystalized ginger.

Whisk flour, ground ginger, baking soda and salt. Set these dry ingredients aside.

Finely chop the candied ginger and grate the fresh ginger.

Melt together butter and honey. Add in brown sugar, egg,  vanilla, fresh ginger and chopped candied ginger. Mix to combine.

Mix the dry ingredients into the wet ingredients to form a sticky dough. Chill for 2 hours.

Scoop around 1 ½ tablespoon of dough for each cookie, and roll it into a ball.

Roll each cookie dough ball in granulated sugar. Bake for 8-10 minutes.
