Blueberry Streusel Muffins

These blueberry buttermilk muffins are fluffy, flavorful, and moist, with a crispy streusel topping.

STREUSEL- In a small bowl combine melted butter, granulated sugar, and all-purpose flour. Use a fork to combine it into a coarse crumb, then set it aside.

In a separate bowl, combine flour, baking powder, and salt and mix together. Set these dry ingredients aside.

In a large bowl, add the melted butter, granulated sugar, eggs, vanilla, buttermilk, and lemon zest. Beat it all together until combined.

Fold through the dry ingredients gently.  Fresh blueberries can be folded in now too.

Add frozen blueberries in after the batter has been scooped to stop them bleeding color.

Generously top with the streusel crumble.

Bake until golden brown and the tops spring back when pressed.
