Sourdough Ciabatta Rolls

These sourdough ciabatta rolls are light and airy with a golden crust. The dough is high hydration, but it’s still simple to make by hand.

The dough is made of sourdough starter, bread flour, water, salt and a little bit of oil.

Stretch and fold it to give it strength, let it rise, then chill overnight.

In the morning, shape the dough into a rectangle . Flour the dough well and use a bench scraper to cut this dough into 6 equal pieces.

Let the pieces rest at room temperature for around an hour, and preheat the oven to 450 °F/ 230°C while the dough is resting.
