Candy Cane Brownies

 The perfect Christmas brownies with a fudgy brownie base, topped with a peppermint buttercream, swirled with candy canes.

Melt butter and chocolate together, then whisk through granulated and brown sugar.

Beat in 2 eggs, one at a time followed by vanilla extract, peppermint extract and salt.

Whisk through cocoa powder, then finally all-purpose flour.

Add the batter to a lined 8x8 pan and bake until baked through. Let it cool right down to room temperature.

Whip butter until creamy, add powdered sugar and cream and peppermint extract. Beat until thick and then add crushed candy canes.

Spread onto the cooled brownie base.

Top with more candy cane pieces. Place in the fridge for 20 minutes to firm up the buttercream slightly.

Cut into 16 pieces,.
